Loaded Cheeseburger Burritos (Meal Prep Series)

Serves | 10 burritos

Ingredients:

  • 2 lb ground beef

  • 1 c cheddar cheese, shredded 1 c pickles, chopped

  • 1 onion, chopped

  • 1 (10) oz can fire roasted diced tomatoes

  • 3 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp oregano

  • 2 tsp cumin

  • 1⁄2 c plain Greek yogurt

  • 1⁄4 c ketchup

  • 3 tbsp yellow mustard

  • 10 tortillas

Optional Burger Sauce:

  • 1⁄2 c plain Greek yogurt

  • 2 tbsp ketchup

  • 1 tbsp yellow mustard

  • 1-2 tsp pickle juice

Directions:

  1. In a large skillet, heat a drizzle of oil and sauté onions until soft and caramelized.

  2. Add ground beef and cook until browned. Season with onion powder, garlic powder, oregano, cumin, and salt to taste.

  3. Stir in tomatoes and simmer briefly to reduce excess moisture.

  4. Turn off the heat and mix in cheese and pickles until melted and combined. Then stir in yogurt, mustard, and ketchup.

  5. Add ~1 cup filling and roll tightly into a burrito. Wrap in foil, label it, and freeze immediately. Repeat until all the filling is used.

    Optional Burger Sauce For Serving: mix ingredients together in a bowl and serve on the side for dipping.

Burrito Tips: Chill mixtures before wrapping for easier handling, warm tortillas slightly to prevent cracking, and freeze burritos right away to avoid sogginess.

To Reheat: Microwave wrapped in paper towel for 2-3 minutes. For a crispy finish, sear in a hot skillet (3–5 minutes per side) or air fry at 375°F for 6–8 minutes, flipping halfway.
