Crunchy Cereal Protein Bars (Meal Prep Series)

Serves | 9-12 bars

Ingredients:

  • 3 c cereal of choice

  • 1 c protein powder

  • 2 tbsp maple syrup

  • 5–6 tbsp milk

  • 1⁄4 c chocolate chips + 1⁄2 tsp coconut oil

Directions:

  1. In a large mixing bowl, whisk together protein powder, maple syrup, and milk until smooth.

  2. Add cereal and stir to coat evenly using a spatula. Mixture should be fully combined without a pool of liquid at the bottom. Depending on cereal used, if the protein powder is still dry, add a splash more milk.

  3. Tightly press the mixture onto a parchment-lined 8x8 dish, spreading it evenly into a bar layer. Freeze for 1–2 hours until firm.

  4. Melt chocolate with coconut oil until smooth. Drizzle over the top and freeze again for another 5–10 minutes until set.

  5. Cut into bars and freeze in a freezer-safe container. Let sit at room temp 5–10 minutes before eating for the best texture.
