S’mores Ice Cream Protein Bars (Meal Prep Series)
Serves | 9-12 bars
Ingredients:
1 (8 oz) tub whipped topping
½ c vanilla protein powder
1 ¼ c Simple Mills Honey Cinnamon Sweet Thins, finely crushed (or graham crackers)
⅓ c chocolate chips + ½ tsp coconut oil
Directions:
In a bowl, mix finely crushed crackers with 3-4 tbsp water until evenly coated or pulse ingredients together in a food processor. Press into a parchment-lined 8x8 pan to form an even base.
In a separate bowl, fold together whipped topping and protein powder until smooth (being careful not to over-mix, which can deflate the mixture). Spread evenly over the crust. Freeze this layer for 10–15 minutes.
Melt chocolate with coconut oil until smooth and then drizzle on top.
Freeze until firm, about 3–4 hours or overnight. Slice into 9–12 bars and store in an airtight container in the freezer. Let sit at room temp 5–10 minutes before eating for the best texture. Optional: For slightly thicker bars, double the whipped topping.
