Sausage Gravy & Egg Burritos (Meal Prep Series)

Serves | ~10 burritos

Ingredients:

  • 2 lb pre-cooked chicken sausage, diced (~24 small links)

  • 24 eggs

  • 2 c cottage cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2-3 tbsp finely chopped chives or green onion

  • ~10 tortillas

Directions:

  1. If frozen, heat sausage just enough to slice easily—either sauté in a skillet over medium heat for 3–4 minutes until lightly browned, or microwave for 45–60 seconds until warmed through. Slice into thin rounds and transfer to a large mixing bowl.

  2. In the same skillet, soft scramble eggs and season with salt. Remove from heat and add to the bowl with the sausage.

  3. While the sausage and eggs are cooling, blend the cottage cheese with garlic powder, onion powder, and pepper until smooth.

  4. Pour the blended cottage cheese over the sausage and eggs. Add chives or green onion. Stir gently to combine.

  5. Add ~1 cup filling and roll tightly into a burrito. Wrap in foil, label it, and freeze immediately. Repeat until all the filling is used.

Burrito Tips: Chill mixtures before wrapping for easier handling (use a slotted spoon if filling is too runny). Warm tortillas slightly before wrapping to prevent cracking. Freeze burritos immediately to avoid sogginess.

To Reheat: Microwave wrapped in paper towel for 2-3 minutes. For a crispy finish, sear in a hot skillet (3–5 minutes per side) or air fry at 375°F for 6–8 minutes, flipping halfway.
