Fudgy Protein Brownies + Chocolate Frosting (Meal Prep Series)
Serves | 9-12 bars
Brownies:
¾ c cottage cheese
¾ c oat flour
2 eggs
2 tsp vanilla extract
½ c cocoa powder
½ c coconut sugar
½ c chocolate chips, melted
¼ c brewed coffee or espresso
1 tsp baking powder
¼ tsp salt
Optional: handful of chocolate chips for mix-in
Chocolate Frosting:
½ c chocolate chips
½ c chocolate protein powder
½ c plain Greek yogurt
1 tbsp unsweetened cocoa powder
Pinch of salt
Directions:
Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper.
In a blender or food processor, combine cottage cheese, oat flour, eggs, and vanilla. Blend until smooth, scraping down the sides as needed.
Add cocoa powder, coconut sugar, melted chocolate chips, brewed coffee, baking powder, and salt. Blend again until completely smooth. If using optional chocolate chip mix-ins, stir in by hand.
Pour batter into prepared pan and smooth the top. Bake for 25-30 minutes or until just slightly underdone in the center for a fudgy texture (this is key for best texture). Set aside to cool completely.
To make chocolate frosting, melt chocolate chips until smooth. Add remaining ingredients and mix until completely smooth. Spread over cooled brownies. Chill or freeze to set.
Slice into bars. Freeze in an airtight container, freezer bag, or portion individually in meal containers. Let sit at room temp 5–10 minutes before eating for the best texture.
