Protein Waffles

Serves | ~10

Ingredients:

  • 3 c cottage cheese

  • 3 c rolled oats

  • 15 eggs

  • 1 tbsp vanilla extract

  • 2 tsp cinnamon

  • Optional: 3 tbsp maple syrup

Directions:

  1. Add cottage cheese, oats, eggs, vanilla, and cinnamon to a blender and blend until smooth. Add optional maple syrup if you’d like a sweeter batter.

  2. Heat a waffle maker and lightly grease.

  3. Pour batter into waffle maker (sprinkle with desired mix-ins) and cook until lightly golden. Repeat until all batter is used.

  4. Serve with fresh fruit, maple syrup, homemade whipped cream, etc. Or you can cool completely and freeze for later.
