Protein Waffles
Serves | ~10
Ingredients:
3 c cottage cheese
3 c rolled oats
15 eggs
1 tbsp vanilla extract
2 tsp cinnamon
Optional: 3 tbsp maple syrup
Directions:
Add cottage cheese, oats, eggs, vanilla, and cinnamon to a blender and blend until smooth. Add optional maple syrup if you’d like a sweeter batter.
Heat a waffle maker and lightly grease.
Pour batter into waffle maker (sprinkle with desired mix-ins) and cook until lightly golden. Repeat until all batter is used.
Serve with fresh fruit, maple syrup, homemade whipped cream, etc. Or you can cool completely and freeze for later.
