Key Lime Pie Protein Parfaits

Serves | 4-6

Ingredients:

  • 32 oz plain greek yogurt

  • Juice from 15 key limes

  • ¼ c instant pudding mix

  • 1 c protein powder

  • 3+ tbsp honey

  • 1 box (4.25 oz) Simple Mills honey cinnamon sweet thins, crushed

  • Optional Toppings: whipped cream, lime zest, lime slices, crushed sweet thins, honey drizzle, granola, toasted coconut flakes

Directions:

  1. Add yogurt, fresh key lime juice, lime zest, pudding mix, protein powder, and honey to a large mixing bowl. Use a hand mixer/stand mixer to whisk until smooth. Adjust honey to taste.

  2. In jars or cups, layer crushed sweet thins and key lime filling. Repeat layers as desired.

  3. Top with whipped cream or any additional toppings.

Notes: Adjust sweetness depending on your protein powder. Add lime juice gradually—the exact amount will vary depending on the size and ripeness of your limes. The mixture should be smooth, creamy, and lightly tangy. If using regular limes instead of key limes, use about ½ – ¾ c fresh lime juice (typically 7–8 limes). Fresh lime juice is highly recommended for the best flavor—bottled juice won’t give the same bright, fresh taste. A handheld citrus press makes this quick and easy. Great for meal prep—store covered in the fridge for up to 3 days.
