Pecan Bars

Serves | 9

Crust:

  • 2 c almond flour

  • 2 tbsp tapioca flour or cornstarch

  • ¼ c butter or coconut oil, melted

  • ¼ c maple syrup

  • Splash of vanilla extract

  • Pinch of salt

Filling:

  • ½ c coconut sugar or maple sugar

  • ¼ c butter or coconut oil

  • ¼ c maple syrup

  • Splash of vanilla extract

  • 1 tbsp tapioca flour or cornstarch

  • 2 c pecans, chopped

Directions:

  1. Preheat oven to 350°F. Prepare a 9×9” baking dish with parchment paper and lightly spray with oil.

  2. In a bowl, mix crust ingredients. Press into the pan in a thin, even layer. Bake for 15 minutes.

  3. While crust is baking, lightly simmer oil or butter, maple syrup, and sugar in a small saucepan. Cut the heat and add vanilla extract and tapioca flour whisking quickly until smooth. Add pecans and stir.

  4. Top the crust with pecan filling and bake again for 15-20 minutes.

  5. Allow to cool completely before slicing and serving. Optionally top with homemade whipped cream or ice cream!
