Balsamic Chicken Salad

Serves | ¾ c dressing

Ingredients:

  • ½ c extra virgin olive oil

  • ¼ c balsamic vinegar

  • 1 tsp salt and pepper

  • 1 spoonful of brown mustard

  • 1 spoonful of honey or maple syrup

  • 2 garlic cloves, minced or garlic powder

  • Chicken breasts or thighs

  • For plating: spinach or spring mix lettuce, apples, strawberries, or peaches

  • Optional garnishes: pecans, feta or goat cheese

Directions:

  1. Add all dressing ingredients to a jar and vigorously shake until combined.

  2. To make chicken, preheat a skillet to medium-high heat and season chicken with salt and pepper. Add a drizzle of oil to the pan and cook the chicken on both sides for around 6 minutes or until the internal temperature reaches 165°F.

  3. Once chicken has cooled, slice into strips and plate on top of salad. Pour over desired lettuce and serve with optional garnishes.

Notes: Our preferred variation is to serve with spinach, apples, pecans, feta, and chicken breasts. If using honey, warm the jar under running water before shaking to blend.
