Creamy Lemon Garlic Chicken
Serves | 7
Ingredients:
7 boneless, skinless chicken thighs
Seasoning:
2 tsp garlic powder
2 tsp Italian seasoning
1 tsp paprika
1 ½ tsp salt
½ tsp black pepper
Avocado oil, for cooking
¾ c chicken broth
Juice of 1 lemon
4 garlic cloves, minced
¾ c heavy cream
Optional Garnishes: parsley, basil, green onion, red pepper flakes
Directions:
Season chicken on both sides with garlic powder, Italian seasoning, paprika, salt, and pepper.
Heat a large skillet over medium-high heat with a drizzle of avocado oil. Cook chicken until golden brown on both sides and cooked through to 165°F. Transfer to a plate.
Reduce heat to medium. Add garlic to the same skillet and cook for about 30 seconds, until fragrant. Add chicken broth and lemon juice, scraping up the browned bits from the bottom. Simmer for 2–3 minutes.
Reduce heat to medium-low and stir in heavy cream. Return chicken to the skillet and simmer for 3–5 minutes, until the sauce slightly thickens. Remove from heat, garnish, and serve over rice or pasta.
