Cinnamon Roll Banana Bread
Serves | 1 loaf
Banana Bread:
3 ripe bananas
2 eggs
1 c milk
½ c olive oil
¼ c honey
2 c all purpose flour (can use GF 1:1)
2 tsp cinnamon
2 tsp baking powder
½ tsp salt
Cinnamon Swirl:
¼ c coconut or maple sugar
1 tsp cinnamon
2 tbsp butter, melted
Cream Cheese Icing:
3 tbsp butter, softened
4 oz cream cheese, softened
½ c maple sugar
Directions:
Preheat oven to 350°F.
Mash banana in a bowl with wet banana bread ingredients. Add dry ingredients and mix to combine. Add to a greased loaf pan and set aside.
In a separate bowl, mix cinnamon swirl ingredients together. Pour the mixture on top and gently swirl in with a fork or knife.
Bake for 40-45 minutes or until center is no longer jiggly and top is lightly brown.
While the bread cools completely, mix together icing ingredients in a bowl. Add on top, spreading evenly, and enjoy!
Notes: Coconut sugar will give the cinnamon swirl a darker, more traditional cinnamon-sugar color, while maple sugar will be lighter.
