Skillet Peach Cobbler

Serves | 3–4

Ingredients:

  • 4 peaches, sliced or diced

  • 3 tbsp butter

  • 1 tbsp honey

  • ¼ c maple sugar, coconut sugar, or brown sugar

  • Pinch of salt

  • Cinnamon, to taste

  • Splash of vanilla

  • 1 c rolled oats

Directions:

  1. Add butter to a skillet over medium heat. Once melted, add peaches and cook for 7–10 minutes, stirring occasionally, until soft and juicy.

  2. Stir in honey, maple sugar, salt, cinnamon, and vanilla. Let bubble for 1–2 minutes until slightly syrupy.

  3. Sprinkle oats over the peaches and mix. Let simmer for a few minutes, stirring occasionally, until oats soften and absorb the juices. If it starts to dry out, add 1–2 tbsp water as needed.

  4. Serve warm with ice cream or whipped cream, if desired.

Notes: If you want it sweeter, add an extra drizzle of honey at the end. For more caramelization, let it sit undisturbed for 1–2 minutes before serving. Fruit swaps: apples, berries, cherries, or a mixed fruit combo all work well (adjust cook time slightly for firmer fruits like apples).
