Maple Sweetened Oatmeal Cookies
Serves | 18-24 Cookies
Ingredients:
2 c rolled oats
1 ½ c all-purpose flour
1 tbsp baking powder
1 tbsp cinnamon
½ tsp salt
4 tbsp butter, ghee, or coconut oil, melted and cooled
2 eggs
Splash of vanilla extract
1 c maple syrup
1 c desired mix-ins (chocolate chips, raisins, etc.)
Directions:
Preheat oven to 350°F and line a cookie sheet with parchment paper.
Add wet ingredients to a mixing bowl and mix, then add dry ingredients and mix until combined.
Drop cookie dough onto pan and bake for 11-13 minutes or until the center is cooked through and edges are slightly browned.
After removing from oven, tap tray to slightly flatten cookies. Cool completely.
Notes: Our preferred variation is using butter and dark chocolate chips. Optional: you can sprinkle with coarse sea salt or drizzle with melted chocolate or peanut butter to serve. My dad’s favorite flavor combo is craisins and white chocolate chips. You can sub all-purpose flour for 1:1 GF flour. I almost always double or triple a cookie recipe so I can freeze extras for later or share them with others.
