Protein Pancakes Breakfast Tray (Meal Prep Series)

Serves | ~10-15

Ingredients:

  • 3 c cottage cheese

  • 3 c rolled oats

  • 15 eggs

  • 3 tbsp maple syrup

  • 1 tbsp vanilla extract

  • 2 tsp cinnamon

  • 30 pre-cooked frozen chicken sausage links

Directions:

  1. Add cottage cheese, oats, eggs, maple syrup, vanilla, and cinnamon to a large blender. Blend until smooth.

  2. Heat a skillet over medium-low and lightly grease.

  3. Pour batter into small pancakes. Cook until small bubbles form and the bottom is golden, then flip and cook until done. Repeat until all batter is used (makes ~30 pancakes).

  4. Divide into freezer containers, each with ~2-3 pancakes and 2 sausage links, and drizzle pancakes lightly with maple syrup.

  5. Cool completely, label, and freeze.
