Cottage Cheese Jalapeño Cheddar Biscuits
Serves | 7-8 large biscuits
Ingredients:
2 c cottage cheese (Good Culture is my favorite)
2 c all-purpose flour
3-4 tbsp milk
1 c cheddar cheese, shredded
1 jalapeño, sliced thin
¼ c green onion, chopped
½ tsp garlic powder
½ tsp salt
1 tbsp baking powder
Directions:
Preheat oven to 400°F and line a baking sheet with parchment paper.
Mix cottage cheese and 3 tbsp milk in a bowl. Add flour, cheddar, green onion, garlic powder, salt, and baking powder. Mix until combined. If too crumbly, mix with your hands and add the remaining 1 tbsp milk as needed.
Divide into 7–8 portions, lightly roll into balls (the dough may be slightly sticky), and place on the prepared baking sheet.
Top each biscuit with 3–4 jalapeño slices and an extra sprinkle of cheddar, if desired.
Bake for 20–25 minutes, until lightly golden. Best served warm!
Notes: For a plain protein biscuit, omit the green onion, jalapeño, and garlic powder.
How to Serve: I love these as-is or sliced in half for a sausage and egg breakfast sandwich.
