Chicken Crust Pizza

Servings | 3-4

Crust:

  • 1 lb ground chicken

  • ½ c oat flour or all purpose flour

  • 1 tsp garlic powder

  • ½ tsp salt

Toppings:

  • ½ c marinara sauce

  • 1 c mozzarella, shredded

  • Optional toppings: pepperoni, veggies, fresh basil

Directions:

  1. Preheat oven to 400°F.

  2. Line a pizza pan with parchment paper.

  3. In a large bowl, combine ground chicken, oat flour, and seasonings. Mix until fully combined.

  4. Transfer mixture to prepared pan and spread with a spatula into a thin even circle (about 12”).

  5. Bake crust for 10-15 minutes, until cooked through and lightly golden. If there’s excess moisture, blot with a paper towel.

  6. Remove from oven and spread marinara evenly over the crust, all the way to the edge. Sprinkle with mozzarella and add any additional toppings. Return to oven and broil on high until cheese is melted and bubbly.

  7. Cut into 8 slices and serve.

Notes: Our preferred pepperoni, if using, is Applegate. We like Raos marinara.
