High-Protein Mac & Cheese (kid-approved)
Serves | 4
Ingredients:
2 (6 oz) box Goodles
5 boiled eggs
½ c cottage cheese
¾ - 1 c milk
Directions:
Cook pasta according to package directions. Drain.
Add remaining ingredients to a blender and blend until smooth, scraping down the sides as needed. Start with ¾ cup milk and add more as desired to reach preferred consistency. The sauce will continue to thicken as it cools, so loosen with a splash of milk when reheating if needed.
Return pasta to the pot and stir in cheese sauce until well coated. Adjust consistency with additional milk if desired and serve warm.
Notes: Use any Goodles boxed mac & cheese variety with this same method. For extra protein, add 1 lb cooked ground beef, ground turkey, or shredded chicken. For a flavor boost, mix in garlic powder, onion powder, or a pinch of smoked paprika. Add frozen peas for an easy veggie boost.
