Hot Honey Goat Cheese Egg Bites

Ingredients:

  • Hard-boiled eggs, peeled and halved

  • Goat cheese (plain or lightly seasoned with herbs)

  • Dates, pitted and split in half

  • Hot honey

  • Pecans, chopped

  • Fresh thyme

Directions:

  1. Slice hard-boiled eggs in half lengthwise and arrange on a serving plate.

  2. Spread a layer of goat cheese onto each egg half. Press a halved date into the goat cheese, drizzle with hot honey, sprinkle with chopped pecans, and finish with fresh thyme leaves.

Notes: No exact measurements needed—adjust based on preference. These sweet + savory egg bites are the easiest way to elevate a simple hard-boiled egg into a fancy appetizer at your next gathering, but easy enough to make on a random weekday for a high-protein snack. The flavors remind me of Thanksgiving!
