Protein Puppy Chow (Meal Prep Series)
Serves | 8-10
Ingredients:
6 c cereal (chex or other)
1 c peanut butter powder + ¾ c water
1 c chocolate chips (heaping) + 2 tsp coconut oil
1 c chocolate or vanilla protein powder
Optional: 1 tbsp coconut sugar
Directions:
In a small bowl, stir together peanut butter powder and water until smooth.
In a separate bowl, melt chocolate chips and coconut oil until smooth. Let cool slightly.
Add cereal to a large mixing bowl. Pour the melted chocolate and peanut butter mixture over the cereal. Gently stir with a fork until all the cereal is coated, being careful not to crush it. Use hands if necessary to gently disperse.
Sprinkle protein powder over the coated cereal and stir until evenly distributed and no powder is sitting at the bottom of the bowl. Depending on the sweetness profile of protein powder being used, add optional coconut sugar and stir if using to adjust sweetness.
Transfer to an airtight container and freeze immediately in a flat layer. Serve frozen; no need to let sit at room temperature.
Notes: Our preferred cereal is Cascadian Farm or Catalina Crunch. We like PB Fit powder, Promix protein powder, and HU dark chocolate. For a muddier, more heavily coated cereal, double the chocolate and PB mixture.
