Sweet Italian Salad

Serves | 1 cup dressing

Ingredients:

  • ½ cup extra virgin olive oil

  • ¼ cup red wine or white vinegar

  • ¼ cup lemon juice

  • 2 spoonfuls of honey or maple syrup

  • 2 garlic cloves, minced, or garlic powder

  • 1 teaspoon salt and pepper

  • 1 spoonful of brown mustard

  • Large pinch of Italian seasoning or fresh Italian herbs

  • For plating: romaine or spring mix lettuce, crumbled bacon, salami, or pepperoni

  • Optional garnishes: tomatoes, parmesan cheese, red onion, olives, pickled banana peppers

Directions:

  1. Add all dressing ingredients to a jar and vigorously shake until combined.

  2. Pour over desired salad ingredients and serve with optional garnishes.

    Notes: Our preferred variation is to serve with spring mix, parmesan cheese, tomatoes, red onion, olives, pickled banana peppers, and pepperoni (Applegate). For the herbs, we like to add a pinch of dried oregano and fresh basil. You can add a spoonful of our homemade mayo to create a creamy Italian dressing. If using honey, warm the jar under running water before shaking to blend.
