Snickers Date Bites
Ingredients:
Pitted dates
Peanut butter (just nuts + salt)
Chocolate chips + coconut oil
Optional topping: crushed nuts, coarse sea salt.
Directions:
Line a tray with parchment paper.
Arrange the dates on the tray, split them open, and gently smash them flat using the bottom of a glass (place a second piece of parchment on top to prevent sticking) to form a base layer.
Dollop peanut butter over each date layer and spread lightly. Tap the tray on the counter to help it settle. Place in the freezer while you melt the chocolate.
Melt chocolate with a bit of coconut oil until smooth. Spoon over the peanut butter layer, then tap the tray again to slightly flatten.
Top with crushed nuts and/or a sprinkle of coarse salt, if desired.
Freeze until set, then store in the freezer and grab one whenever you need a quick sweet treat.
