Fruit Crumble Bars
Serves | 9-12 bars
Ingredients:
4 c blueberries, fresh or frozen
2 lemons, juiced and zested
Splash of vanilla extract
3 tbsp chia seeds
3 c rolled oats
1 c all-purpose flour or 2 c almond flour
¾ c maple syrup
½ c butter, coconut oil, or ghee, melted and cooled
Pinch of salt
Directions:
Preheat oven to 350°F and line an 8x8" baking dish with parchment paper.
In a saucepan, add blueberries, lemon zest, and juice. Optional: add a splash of maple syrup to sweeten. Simmer over medium heat while mashing. Once sauce is formed, remove from heat, add chia seeds and vanilla, and stir. Let cool and make crust.
To make crust, add remaining ingredients to a mixing bowl and mix. Add ¾ of the mixture to the bottom of the pan, pressing down evenly to the edges. Pour the blueberry sauce on top and crumble remaining crust on top.
Bake for 40-45 minutes or until lightly golden brown. Remove from oven and chill completely so the filling can set. Slice into bars and enjoy.
Notes: Our preferred variation is using frozen wild blueberries, butter, and almond flour. You could enjoy warm out of the oven with ice cream. You could also sub blueberries for other fruits such as blackberries, raspberries, strawberries, peaches, etc.
