Peanut Butter Bars
Ingredients:
1 ½ cups almond flour
½ teaspoon salt
1 cup unsweetened peanut butter
¾ cup honey
Chocolate chips
Splash of vanilla extract
Water *for molding
Directions:
Combine dry ingredients in a mixing bowl, then add wet ingredients, and mix. Add two heaping handfuls of chocolate chips.
Finish by molding together with your hands. If the chocolate chips are not sticking to the dough when kneading, you may need to add a splash of water until ingredients mold together.
Line a pan with parchment paper and press dough down evenly. Bigger pans will yield thinner bars; smaller pans will yield thicker bars.
Chill for 15 minutes in the refrigerator and then cut into bars.
Notes: Our preferred variation is peanut butter (Kirkland) and dark chocolate chips (Hu or Bake Believe). You can sub almond flour for oat flour or GF AP flour (King Arthur), but the consistency and amount may vary.
