Birthday Cake Cookie Dough Protein Balls (Meal Prep Series)

Serves | 12 balls

Ingredients:

  • 1 c almond flour or oat flour

  • ¼ c vanilla protein powder

  • ¼ c peanut butter powder + 2 tbsp water

  • ¼ c honey

  • 2 tsp vanilla extract

  • 2 tbsp mini chocolate chips

  • 2 tbsp sprinkles

  • Optional Topping: melted white chocolate drizzle

Directions:

  1. In a mixing bowl, stir together peanut butter powder + water until smooth. Then add honey, vanilla extract, flour, and protein powder, mixing with a spatula or by hand until fully combined.

  2. Gradually add 1 tsp of water at a time if needed—texture should resemble soft cookie dough. Fold in chocolate chips and sprinkles with a spatula to avoid melting.

  3. Scoop into golf ball-sized portions using a small cookie scoop. If using, drizzle with optional melted white chocolate.

  4. Place on a parchment-lined baking sheet and freeze until firm. Transfer to a freezer-safe container. Let sit at room temp 5–10 minutes before eating for the best texture.

Note: This recipe has been updated from the original eBook version. The amount of water in the peanut butter powder mixture has been reduced slightly to improve texture and make the dough easier to roll and handle.
