Cheesy Cabbage Hamburger Helper

Serves | 5-7

Ingredients:

  • 2 lb ground beef

  • 1 head cabbage, thinly sliced

  • 1 onion, diced

  • 1 c chicken broth

  • 1 c milk

  • 3 boiled eggs

  • 1 ½ c cheddar cheese

  • 3 tbsp cream cheese

  • 1 tsp paprika

  • 1 ½ tsp garlic powder

  • Optional Garnishes: chopped parsley, chili crisp

Directions:

  1. Brown beef in a large skillet over medium-high heat, seasoning with salt to taste. Remove and set aside, leaving the drippings behind.

  2. Reduce heat to medium. Add onion and cook until softened, about 3–4 minutes. Add cabbage and chicken broth, cover, and cook for ~10 minutes, stirring once or twice, until the cabbage is very tender and noodle-like.

  3. Meanwhile, add milk, boiled eggs, cheddar, cream cheese, paprika, and garlic powder to a blender. Blend until smooth.

  4. Return beef to skillet. Pour in the cheese sauce and stir to combine. Reduce heat to low and cook uncovered for 3–5 minutes, stirring occasionally, until heated through and slightly thickened. Garnish as desired and serve.

Notes: Slice the cabbage fairly thin, removing any thick, hard pieces, so it cooks down soft and gives you more of that classic “noodle” texture. If you need a bit more liquid to blend, add 1-2 tbsp of milk.
