Loaded Sloppy Joe Fries

Serves | 6-8

Ingredients:

  • 2 lb ground beef

  • 1 red bell pepper, chopped

  • 1 onion, chopped

  • 2 chili seasoning packets of choice

  • ¼ c honey

  • ¼ c ketchup

  • 1 (6 oz) can of tomato paste

  • ¾ - 1 c water

For serving:

Serve over french fries (see notes below). Top with cilantro, green onion or chives, parsley, pickled jalapeños, cheese, yogurt ranch sauce, or hot sauce.

Directions:

  1. In a large skillet over medium-high heat, cook ground beef until browned. Drain excess grease if needed. Add chopped onion and red bell pepper and cook until softened, about 5–7 minutes.

  2. Stir in chili seasoning packets, tomato paste, ketchup, honey, and water. Mix until well combined and smooth.

  3. Reduce heat and simmer for 10 minutes, stirring occasionally, until thickened and saucy. Add more water if needed to reach desired consistency.

  4. Serve warm over fries and finish with desired toppings.

To make homemade fries: Preheat oven to 425°F. Slice potatoes into thin strips. Toss with oil and salt. Spread in a single layer on a parchment-lined baking sheet and bake for 40-50 minutes, flipping halfway through, until golden and crispy.

For an easier option, we love using convenient frozen fries.

Sub for baked potatoes: Preheat oven to 425°F. Scrub russet or sweet potatoes clean and pat dry. Poke a few holes in each potato with a fork. Rub lightly with oil and sprinkle with salt. Place directly on a baking sheet and bake for 45–60 minutes, until the skin is crisp and the inside is soft and fluffy when pierced with a fork.

To make yogurt ranch sauce: Mix yogurt with a spoonful of ranch seasoning (use our original cookbook recipe if you have it) and thin with milk to desired consistency.
