BBQ Chicken Bacon Ranch Pizza
Servings | 3-4
Crust:
1 lb ground chicken
¼ c oat flour or all purpose flour
1 tsp garlic powder
½ tsp salt
Toppings:
½ c marinara sauce
1 c mozzarella, shredded
¼ red onion, sliced
¾ lb bacon, cooked and crumbled
Garnishes: cilantro, ranch sauce, BBQ sauce
Directions:
Preheat oven to 400°F.
Line a pizza pan with parchment paper.
In a large bowl, combine ground chicken, oat flour, and seasonings. Mix until fully combined.
Transfer mixture to prepared pan and spread with a spatula into a thin even circle (about 12”).
Bake crust for 10-15 minutes, until cooked through and lightly golden. If there’s excess moisture, blot with a paper towel.
Remove from oven and spread marinara evenly over the crust, all the way to the edge, with a drizzle of bbq sauce. Sprinkle with mozzarella, red onion slices, and crumbled bacon. Return to oven and broil on high until cheese is melted and bubbly.
Garnish with chopped cilantro, and a drizzle of ranch and BBQ sauce. Cut into 8 slices and serve.
Notes: For the ranch sauce, we use our ranch seasoning from the original cookbook. Mix it with equal parts plain Greek yogurt and homemade mayo, then thin with milk to your desired consistency. Or try this!
