High-Protein Beefy BBQ Mac & Cheese

Serves | 4

Ingredients:

  • 2 (6 oz) box Goodles

  • 5 boiled eggs

  • ½ c cottage cheese

  • ¾ - 1 c milk

  • 2 lb ground beef

  • 1 packet BBQ seasoning

  • BBQ sauce drizzle, for garnish

Directions:

  1. Cook ground beef in a skillet and season with bbq seasoning. Set aside.

  2. Cook pasta according to package directions. Drain.

  3. Add remaining ingredients to a blender (including the cheese packets that come with the Goodles box) and blend until smooth, scraping down the sides as needed. Start with ¾ cup milk and add more as desired to reach preferred consistency.

  4. Return pasta to the pot and stir in cheese sauce until well coated. Add beef and stir. Adjust consistency with additional milk if desired and serve with a drizzle of BBQ sauce on each plate.

Notes: The sauce will continue to thicken as it cools, so loosen with a splash of milk when reheating if needed. Use any Goodles boxed mac & cheese variety with this same method. For different protein, sub beef for ground turkey or shredded chicken.
