Broccoli Cauliflower Salad

Serves | 4-6

Ingredients:

  • 1 head of broccoli, chopped

  • 1 head of cauliflower, chopped

  • ½ pound bacon, cooked and crumbled

  • Optional mix-ins: cranberries or raisins, sunflower seeds, red onion

  • Dressing: 1 cup plain yogurt or mayo, honey, white vinegar

Directions:

  1.  Add broccoli and cauliflower to a large bowl. Top with crumbled bacon and a handful each of desired mix-ins.

  2. To make dressing, add yogurt/mayo, a spoonful of honey, and a splash of white vinegar to a bowl, and stir to combine. Pour as needed over vegetables, ensuring all ingredients are well coated with dressing. Season with salt and pepper.

    Notes: Our preferred variation is using a combination of our homemade mayo and plain yogurt for dressing, and adding raisins and sunflower seeds as mix-ins. Our favorite method to cook bacon is baking in the oven. Preheat oven to 375°F, arrange bacon slices on a foil lined baking sheet, bake for 25-30 minutes or until crispy.
