Gooey Granola Bars
Serves | 20-30 bars
Ingredients:
3 ½ c unsweetened nut butter (28 oz. jar)
6 c rolled oats
1 tsp salt
Sprinkle of cinnamon
1 ½ c honey
Desired mix-ins: chocolate chips, raisins, shaved almonds, pecans, pepitas, freeze dried fruit, sprinkles, unsweetened coconut flakes, chia seeds
Directions:
Add dry ingredients to a large mixing bowl, then add wet ingredients on top. Using a mixer, blend ingredients together. Fold in three heaping handfuls of desired mix-ins.
Drop granola on a parchment paper lined baking sheet and press down evenly with the palm of your hand or a flat object.
Let harden in the refrigerator. Slice as desired and enjoy.
Notes: Our preferred variation is using unsweetened peanut butter and adding either three heaping handfuls of dark chocolate chips as a mix-in or one handful each of shaved almonds, pepitas, and raisins as mix-ins. You can make into energy balls by rolling into balls. Depending on the natural oils in the nut butter chosen, you may need to add a bit of water to help mold ingredients together. For a pop of color, sprinkle a few extra mix-ins on top before pressing and slicing. Optional: drizzle melted chocolate on top after bars have hardened in the refrigerator and top with coarse sea salt. Swap some mix-ins for protein powder if desired!
