Protein Caramelized Onion Dip
Serves | 8-10
Ingredients:
8 slices bacon, chopped
3 sweet onions, finely chopped
4 tbsp butter
2 c cottage cheese
8 oz cream cheese, softened
6 green onions, thinly sliced
1 tsp Worcestershire sauce
1 tsp onion powder and garlic powder
Salt and black pepper, to taste
Chili crisp, optional garnish
Directions:
Add bacon to a large skillet and cook until crispy. Remove and set aside, leaving bacon grease in the skillet.
Add butter and onions. Cover and cook over medium low heat for 50 minutes, stirring every 15 minutes. Add a splash of water as needed if the onions begin to stick.
Uncover and cook for up to 10 more minutes, until any excess liquid has cooked off. The onions should be very soft, jammy, deeply golden brown, and significantly reduced. Remove from heat and let cool slightly.
Add cottage cheese, cream cheese, Worcestershire sauce, garlic powder, and onion powder to a food processor or blender. Blend until smooth and creamy.
Add cottage cheese mixture to a bowl and fold in the caramelized onions, green onions, and bacon, reserving some of each for topping. Season with salt and pepper to taste.
Refrigerate for at least 1 hour. Top with reserved caramelized onions, bacon, green onions, and a drizzle of chili crisp before serving.
Notes: Caramelizing time may vary depending on your skillet and the amount of bacon grease remaining. If there is no excess liquid after 50 minutes, skip the additional cooking time.
How to Serve: Serve with fresh veggies like cucumbers, carrots, and bell peppers, crackers, or my personal favorite, potato chips.
