No-Bake Strawberry Protein Bars

Base:
2 c oat flour
1 c vanilla protein powder
4 tbsp butter or coconut oil, melted
2 tbsp maple syrup
Up to ⅓ c milk *see directions
Strawberry Frosting:
1 c cottage cheese
5 oz cream cheese, softened
3 tbsp maple syrup
½ c vanilla protein powder
½ c powdered freeze-dried strawberries
2 tbsp dry sweetener of choice (maple sugar, coconut sugar, instant pudding mix, etc)
Sprinkles, for topping
Directions:
Line an 8×8” pan with parchment paper. Mix base ingredients with a fork, adding milk a little at a time until a soft dough forms. As the mixture begins to come together, use your hands to finish mixing. Press evenly into the pan and freeze.
To make the frosting, add cottage cheese and cream cheese to a food processor or blender and blend until smooth. Add remaining frosting ingredients until smooth, scraping down the sides as needed. *Add more freeze-dried strawberries to adjust color if desired.
Spread frosting evenly over the base and top with sprinkles. Freeze for ~60 minutes, or until firm enough to slice. Store covered in the freezer and let sit at room temperature for a few minutes before serving.
Notes: I use a NutriBullet to blend oats and freeze-dried strawberries into a fine powder. A blender, food processor, or coffee/spice grinder also works.
2 c oat flour is about 2 c rolled oats before grinding, and ½ c powdered freeze-dried strawberries is about 2 oz before grinding.
