Blended Raspberry Mojito

Serves | 1

Ingredients:

  • ¼ c fresh blueberries

  • 2 oz white rum

  • ¼ c water (add more if needed for blending)

  • 1 c frozen raspberries

  • 3 c ice cubes

  • 2 tbsp fresh mint leaves, packed

  • 1 tbsp honey

Directions:

  1. Place blueberries in a small bowl and lightly mash them with a fork. Set aside.

  2. Combine remaining ingredients in a blender and blend until smooth. This drink is thick, so you may need to stop your blender and scrape down the sides.

  3. Pour or spoon the mojito into cups and top with the muddled blueberries.

Notes: For an extra chilled drink, place your glasses in the freezer before serving. If desired, rim the glasses by dipping them in lemon juice, then your sweetener of choice. The amount of liquid needed may vary depending on your blender—add just enough to blend until smooth. A thicker consistency is best so it doesn’t melt as quickly.
