Green Goddess Chicken Salad

Serves | 4-6

Ingredients:

  • 1 rotisserie chicken, shredded (about 3–4 c, or ~1–1½ lbs cooked chicken)

  • 4 hard-boiled eggs, roughly chopped

  • ¾ c plain Greek yogurt

  • ¼ c mayo

  • 2 tbsp spicy brown mustard

  • Juice of ½ lemon

  • Salt and pepper, to taste

  • Fresh herbs (about ¼ cup each, packed): basil, chives, parsley, dill

Directions:

  1. Add all ingredients to a large bowl and mix until well combined. Taste and adjust with salt and pepper as needed.

  2. Serve with crackers, fresh vegetables, on bread, or enjoy it straight from the bowl. Store in an airtight container in the refrigerator for up to 3–4 days.

Notes: We love using pre-boiled eggs (Costco makes this so easy) for a quick lunch prep.

Don’t have all the herbs? No problem—use what you have or skip them altogether. It’ll still be delicious.
