No-Bake Chocolate Peanut Butter Cookies
Serves | ~32 cookies
Ingredients:
½ c coconut oil
1 ½ c coconut sugar
½ c milk of choice
¼ c cacoa powder
½ tsp salt
3 ¼ c rolled oats
¾ c peanut butter (only nuts and salt)
2 tsp vanilla extract
Coarse sea salt, for topping
Directions:
Add coconut oil, coconut sugar, cacoa powder, milk, and salt to a medium saucepan. Heat on medium while stirring until ingredients are melted. Simmer 1 minute.
Cut the heat and stir in chocolate chips, peanut butter, and vanilla extract until melted. Stir in oats until coated.
With a cookie scoop, drop balls onto a parchment paper lined baking sheet. Keep round or flatten slightly to your desired thickness. Sprinkle with sea salt. Refrigerate for 30 minutes or until hardened.
