Date Crunch Bars

Serves | 8-12

Ingredients:

  • 15-20 dates, pitted & butterflied

  • 2 c cereal of choice (anything crunchy works!)

  • ½ c unsweetened peanut butter

  • 1 c chocolate chips

  • ½ tbsp coconut oil

  • Coarse salt, for topping

Directions:

  1. Line a tray with parchment paper.

  2. Remove pits from the dates and butterfly them open. Press them into a flat, even layer on parchment paper or in a lined dish, slightly overlapping to form your “crust.”

  3. In a bowl, mix your cereal with peanut butter until fully coated. You’re looking for a sticky, well-coated texture so it holds together easily. Lightly press the cereal mixture over the date layer.

  4. Melt the chocolate chips with coconut oil until smooth. Drizzle evenly over the top,.

  5. Sprinkle with coarse salt, then freeze for 15–30 minutes until set.

  6. Remove from freezer, slice into bars, and enjoy! Store in the fridge or freezer for best texture.

Notes: My favorite chocolate is Hu’s dark chocolate chips. This recipe is very forgiving, don’t stress about exact measurements. Adjust based on what you have and what you like.
